Tasting Notes:

Black as night with squid ink hue. Powerful nose with dark exotic fruits hard to pin point initially. Once given time to breathe blackberry, liquorice, black plum and mocha all show with a definitive core of new tight grain American oak and black pepper. Impressively rich and opulent the palate delivers what the nose promises. Dark lavish fruit with dark chocolate, liquorice and black plum followed with tightly wound American oak and black pepper. After being allowed to breathe the new oak mellows and allows firm fine grained tannins to rise up and the aftertaste which appears never ending hits a naturally occurring sweet spot and presents with the main features being liquorice, dark chocolate, mocha and oak.

Technical:

We hand picked a small section from block 13 rows 18-36 to created a style of wine guided by the fruit initially. We wanted a wine to last and be able to handle brand new American oak for therefore selected this small section as the fruit produced dark flavours which could withstand time and tightly grained oak. The fruit was transferred to the winery and the fruit was macerated for an extended period with seeds and stems to allow us to give a vision of the vineyard in the final wine. The wine was left in this state for 23 days and hand plunged which ensured we extracted all the colour, aromas and tannin we could. Basket pressed into barrel again allowed us to continue the hands off method and ensure fruit purity was key again this ensures longevity. The wine was not topped during its 298 days it spent in barrel then finally it received minimal filtration and fining. This wine makes no apologies for being a big bad Barossa Shiraz in every sense, brace yourself.
