Tasting Notes:

The Unicus is the product of Shiraz fruit that just could not be ignored in the Seaview subregion of McLaren Vale. When we see and taste exceptional, one of a kind fruit, it excites us to pick, nurture, and bring to your glass… an exceptional wine. This powerful Shiraz shows illuminating purity of plums, black currants and a touch of cedar. There is spicy clove and black pepper on the nose, supported by red and black currant perfume. The length and drive of well structured tannins allow the Unicus to cellar well.

Technical:

Fermented in small open fermenters for a gentle fermentation that is completed in 12 days, pressed to new and older French Oak hogsheads and matured for 20 months.

This is compelling and engaging, showing lifted aromas of blackberry, cassis, vanilla, black olive, anise and toasted hazelnut characters. It is powerful and substantial on the palate with gorgeous fruit concentration and elegant spicy/savoury nuances, wonderfully enhanced by lavish texture and seamlessly woven tannins. Flatteringly classy and sophisticated.

The nose gives a heady mix of blackberry, plum, and cherry with milk chocolate and vanilla spice. Elegant and luxurious at the same time. The palate opens with a swathe of dark fruits on a bed of supple but finely structured tannins. Oak provides a vanilla background with embellishments of earth and graphite that are soaked up by blackberry fruit. Chocolate richness with a touch of briar frame the long and dark fruited finish. An impeccable release

Deep colour and a rich, ripe fruit and toasty oak bouquet, laced with chocolate. The oak is more apparent in the mouth, where it has a charred-timber quality overlying its substantial dark cherry and blackberry fruit flavours. It’s full-bodied, rich and concentrated, with lovely amplitude and fleshy mouth-feel. A superb wine with massive potential.
