The Normans Chais Clarendon McLaren Vale Shiraz 2018 is a powerful and seductive wine from one of McLaren Vale’s most elevated subregions. In the glass, it shows a deep dark purple/black core with a vibrant red hue. The nose is richly layered with luscious ripe blackberry, concentrated cherry, and underlying notes of plum, red liquorice, and a touch of warming spice.
On the palate, it is youthfully opulent and full-bodied, with intense waves of dark plum, cherry, and blackberry, underscored by aniseed, Chinese five spice, and subtle oak complexity. Fine-grained tannins frame the wine beautifully, while a lively burst of acidity provides freshness and balance through the long, lingering finish. The oak is perfectly integrated, adding depth without overpowering the expressive fruit.
This bold and structured Shiraz is an excellent match for chargrilled ribeye steak, slow-cooked lamb shoulder, or venison with blackberry jus. It also pairs well with aged cheddar, mushroom risotto, or black pepper tofu for a rich vegetarian pairing. Its power and spice-friendly profile also make it an ideal wine for hearty winter dishes and long, fireside dinners.
Fermented in small open top stainless steel, these fermenters ensure we maintain strong fruit flavor from skins. Hand plunged twice daily for seven days then transferred into American and French oak barrels for the remainder of ferment then spent 14 months to allow full flavour development. Drinking superbly now but for those patient enough to hold off this will develop beautifully for well over a decade years.
