Sourced from the best rows of Kilikanoon’s Leasingham vineyard overlooking Watervale, The Oath Cabernet Sauvignon 2021 showcases the perfect balance of power and elegance. This wine is a tribute to the unique terroir of the Clare Valley, where the combination of soil, climate, and meticulous viticulture leads to exceptional fruit concentration.
The wine is fermented in open fermenters for 7-8 days, with gentle pumping over twice daily to ensure maximum extraction of flavour and colour. After fermentation, the wine is basket-pressed into quality French oak hogsheads (5% new oak, balance 2-5 years old) for 15 months of maturation. This slow maturation process imparts structure and complexity to the wine, with minimal fining or filtration to preserve the purity of the fruit.
On the nose, The Oath Cabernet Sauvignon delivers vibrant aromas of red fruits, including blackberry and cassis, followed by complex savoury nuances of earthy spice and subtle oak.
