Bayliss Road Single Vineyard McLaren Vale Cabernet Sauvignon 2025 is a concentrated and expressive release sourced from a single vineyard on Bayliss Road in the Tatachilla sub-region of McLaren Vale. Carefully harvested in parcels over the course of a week, the fruit was fermented separately in open stainless steel fermenters for 14 days to maximise colour, flavour and varietal character. Following fermentation, the wine was pressed to tank where free-run and pressings were combined before ageing for 12 months in a combination of French and American oak. The final blend was then assembled, filtered and bottled to capture the purity and richness of this McLaren Vale Cabernet.


In the glass, the wine shows a deep purple-black core with brick red hues. The nose is inviting and layered, dominated by dark cherry and blackberry aromas with subtle notes of roasted coffee and nougat adding depth. The palate is medium to full-bodied and fruit-driven, delivering juicy dark cherry and blackberry supported by hints of nougat, roasted coffee bean and lightly spiced oak. Excellent concentration is balanced by subtle tannins and refreshing natural acidity, leading to a long, smooth finish.


Sourced from the acclaimed Tatachilla sub-region and produced by a multiple Gold Medal-winning winery, this Cabernet Sauvignon showcases the richness and vibrancy McLaren Vale is known for. It is drinking beautifully now and will continue to evolve gracefully over the next five years.


This Cabernet pairs perfectly with chargrilled steaks, lamb cutlets, gourmet burgers, slow-cooked beef dishes or aged cheddar, where its dark fruit richness and smooth tannin structure shine.
