Tasting Notes:

Lush nose with dark cherry and black fruit flavours with cool climate spice.Moreish palate with dark cherry and black fruit carrying over from nose along with spice cutting through the grippy silk tannins. French oak provides some depth and complexity.

Technical:

Whole bunches were selected and picked in the cool hours of the morning we then crushed, and the juice underwent traditional fermentation with extended time on skins. Pumped over daily to keep cap moist and to extract flavour and colour. Ferments were racked into older oak and underwent malolactic fermentation. The lees were racked off then aged in oak for 12 months. Bottled with minimal fining and filtration.
