Tasting Notes:

Deep crimson This Cabernet Sauvignon expresses the varietal punch of cassis coupled with classic briar, the aromas are vibrant and enticing. Blackcurrants and blueberries are the primary fruits; the palate has mouth coating tannins that are perceptible yet not dominating. The line and length of this wine is generous yet shows true Cabernet style of structure and control.

Technical:

The lead up to Vintage 2013 was perfect for quality fruit across all varieties. The summer months were warm with some rain events; these rains helped give the vines a great start and allowed them to access sub-soil moisture into summer. The vines from which the fruit is sourced were strong and healthy producing grapes with focused flavour with excellent quality and structure.

The grapes were fermented in static and rotary fermenters. Warm temperatures at the onset of fermentation and also 3-5 days post ferment maceration has helped extract soft fleshy tannins and build wine structure.
