Everything we suggested about the ‘Immortelle’ being in the perfect place to succeed applies just as much to this wine. You could put money on it (and we suggest you do just that, squirreling a few away in the cellar). Made by way of fermentation in a mix of small open fermenters and static fermenters, before pressed to barrel for ten months maturation.
Deep magenta in colour, this does need time in the glass to open up. Initially, it is tight, taut, tense and muscular. With a little time, we have a glorious cornucopia of aromas – coffee bean, chocolate, blackberries, mulberries and more. The palate is also looking very impressive. Good acidity runs the length and more dark chocolate notes become apparent. This is moving right into classic McLaren Vale Shiraz territory, although that is hardly surprising. Good length and the intensity is maintained for the full journey. A long future awaits any bottles well cellared. A cracker.

"The details for the Vitulus Shiraz are almost identical to those of the Bull Trader, with the exception that this single Coonawarra vineyard was planted thirty years ago, not 35. For me, the pick of the latest set of releases from this winery. Loved it. Dark maroon in colour, there are touches of dried herbs, garden notes and red cherries on the nose. Even a hint of stonefruit, as though there was a dollop of Viognier included (there is not, as far as I am aware). Chocolate and leather round things out. Good intensity and serious length here, perhaps more so than in any of the other current releases. Good balance and some early complexity. A seriously good Coonawarra Shiraz with a decade ahead of it."

"The 2020 Vitulus Shiraz spent 15 days on skins and was then matured for 18 months in a combination of French and American oak. This is a bursting, almost sybaritic rendition of Coonawarra Shiraz: the fruit profile is all about blueberries, red snakes, sweet licorice and raspberry. One might suggest it barely needs the sweet infusion of American oak, but then again, it is a delicious package right now and should be treated as such. This will age, but why would you—it is perfect, supple, slinky drinking right now."
