Parker Estate Terra Rossa Coonawarra Cabernet Sauvignon 2021 is a benchmark expression of the region’s famed terra rossa soils, delivering a wine that embodies elegance, structure and true Coonawarra character. Since its first release in 1988, Parker Estate has been synonymous with exceptional Cabernet Sauvignon — wines of outstanding quality, longevity and classic refinement.

Sourced from eight individual blocks within the ‘Abbey’ vineyard at the southern end of Coonawarra, this Cabernet benefits from an extended ripening period, producing concentrated fruit with beautifully tightened tannins. Following harvest in mid-April, the parcels were fermented for 9–14 days, with some undergoing further maceration to build structure and cellaring potential. The wine then spent 12 months maturing in 40% new French oak, allowing seamless integration of fruit and oak character.

In the glass, it shows a dark scarlet core with purple hues. Aromas of dried herbs and sage rise elegantly, intertwined with bramble, blackcurrant and subtle red fruit notes of cranberry and pomegranate. The palate is vibrant and intense up front, flowing with flavours of black fruits, sarsaparilla and clove, supported by fine silky tannins and nuances of mocha and umami. The finish is long, balanced and complex — a hallmark of Parker Estate’s signature style.

This refined Cabernet Sauvignon pairs beautifully with roast lamb, chargrilled eye fillet, beef short ribs or aged hard cheeses, and will continue to evolve gracefully in the cellar over the next decade.
