Tasting Notes

Western Barossa Wines Barossa Valley GSM 2016

Deep crimson red with vibrant purple hues. Rich blackberry aromas supported integrated spicy vanillin oak. Impressively rich and opulent the palate delivers what the nose promises. Spicy dark berry fruit with cassis and cherry being dominant. Blackberry and some freshly cut plum provide a round fruit driven mid palate whilst the skillful use of second and third use oak ensure this is a full-flavoured and complex wine with stylish oak tannins.


Simon Hackett Hills View McLaren Vale Shiraz 2015

Peppery aromas coupled with luscious, sweet berry and toasty vanilla notes. Soft tannins are balanced by plum and cherry flavours, and herbaceous eucalyptus notes. Robust yet elegant.


Clare Hills Clare Valley Sauvignon Blanc Semillon 2018 By Neil Pike

Pale green/straw in appearance and has gentle tropical fruits with some subtle herbal characteristics playing a supporting role. There is also a little stone fruit and a some of our regional flinty/slatey character in the mix as well. The palate is fresh, crisp and dry with a little texture kicking in at the end giving the wine some extra length and backbone. 


Einzellage Moculta Eden Valley Pinot Gris 2018

Pale straw with green tinge. Lifted aromas of pear, honeyed apples and a touch of spice. Medium bodied wine with nashi pear and citrus being primary flavours. The finish is quite long and balances out the fruit components with the textural element found in cooler climate Pinot Gris with great depth of flavour.


Lunch Like Its Your Last Coonawarra Cabernet Sauvignon Nv

Displays as dark ruby red with violet hues. The bouquet of dark forest fruits such as cassis, blackcurrant and plum lead effortlessly into a well structured back bone of mint and vanilla oak. Opening up with lovely cassis, blueberry and ink like fruit intensity whilst fine-grained texture gives balance. The mid palate is quite dense with another seasoning of blueberry, plum and chalky tannins. A hint of vanilla roasted chestnut oak and dark chocolate adds further complexity and a lovely lingering finish.


Songlines Estates Adelaide Hills Pinot Noir 2017

Full bright crimson red with dark purple hues. Lush dark and light berry fruits combine with floral edge that creates a fresh and vibrant introduction. Vibrant cherries are the centre piece in this wines infancy a touch of pepper and licorice appear when allowed to breathe which although appear to be opposite ends of the taste spectrum work harmoniously together whilst some crisp acid provides a refreshing Moorish finish. The wine has fine-grained silky smooth tannins, which continue to roll on and on and seem lavish on the palate demanding another taste.

We hand picked a small section of Grenache from Block 4 rows 7-23, Shiraz from block 5 rows 1-12 and block 8 rows 3-9 to created a style of wine guided by the fruit initially. We wanted a wine driven by fruit yet surrounded in a bed of spicy flavours and tannin therefore selected these small sections as the fruit produced dark berry flavours with wonderful spice characters which would infiltrate not be overwhelmed by second and third use oak. The fruit was transferred to the winery and the fruit was combined together to ensure it worked harmoniously through the entire winemaking process; macerated for an extended period with seeds and stems to allow us to give a vision of the vineyard in the final wine. The wine was left in this state for 30 days and hand plunged which ensured we extracted all the colour, aromas and tannin we could. Basket pressed into barrel again allowed us to continue the hands off method and ensure fruit purity was key again this ensures longevity. The wine was not topped during its 256 days it spent in barrel then finally it received minimal filtration and fining. This wine illustrates just how beautiful a wine from the warm Wild West can be, in a word moreish.

A wine, which will appear beautifully, round and lavish if drunk upon release whilst the oak tannins provide a backbone, which will ensure drinking over the next decade will not be a problem.


Simon Hackett Hills View McLaren Vale Shiraz 2015

The Simon Hackett story goes back well before the establishment of Simon Hackett  Wines. Four generations of the Hackett family followed agricultural pursuits in South Australia. In 1860, Simon’s great uncle attended the esteemed Roseworthy Agricultural College whilst Simon’s father was a graduate in the inaugural Oenology Course at the college in 1938.

Simon grew up in an atmosphere steeped in wine, spending his boyhood in the Barossa Valley alongside his father, who was General Manager and a Director of the giant Barossa Valley Distillery, Tarac International. The family home was situated next to the sprawling Saltram Winery outside Angaston. Given this environment, it was not surprising that Simon, at the age of eighteen, elected to follow a career in winemaking and joined the team at the neighbouring Saltram Winery.

Serving his apprenticeship under the watchful eye of master winemaker, Peter Lehmann, Simon progressed through the ‘Saltram ranks’. In 1970 he completed a vintage in the Hunter Valley Region of New South Wales, before returning to the Saltram Winery for another two years.

In 1973 Simon decided to move to McLaren Vale thus his association with the region began and continues today. Simon’s first vintage in McLaren Vale was at the Southern Vales Co-operative Winery, where he worked with the outstanding winemaking team of Grant Burge and Ian Wilson. After eight years he was appointed Senior Winemaker at Southern Vales Co-operative Winery, now known as Tatachilla Wines.

In 1984, Simon decided to leave Southern Vales Winery and concentrate fully on establishing his own boutique winery situated in McLaren Vale.

Once out on his own Simon quickly re-established his links with the Barossa Valley and now crushes grapes grown in McLaren Vale, Barossa Valley and the Adelaide Hills regions of South Australia at his own winery at the gateway to the McLaren Vale vineyards.

Today, Simon Hackett is a boutique wine maker in every sense of the word. He produces a selection of red and white wines under his own, very distinctive label. Having established his own company in late 1984, Simon’s dream was not to create an ‘empire’ but to remain small, producing limited stocks of wine each year for semi private use. Luckily for us he decided to launch the company as a full time project after only a few years. 

The Simon Hackett brand has gone from strength to strength and production is now around 20,000 cases per year. The last few years have seen Simon introduce a stunning limited release Sauvignon Blanc from the Adelaide Hills.

Simon’s winery, originally a disused cellar on a hill overlooking the beautiful McLaren Vale, is situated on the last rise as you enter the McLaren Vale region from Adelaide, easily visible and just off Budgens Road. The cellar door is light, bright and magnificently appointed with a long arched veranda looking out over the surrounding vineyards and countryside.


Clare Hills Clare Valley Sauvignon Blanc Semillon 2018 By Neil Pike

The vintage was shaped by a typically cool winter and spring, but with below average rainfall. Timing of budburst and flowering were pretty much normal and harvest commenced on 14th February for us. We experienced above average temperatures during January, but February and March were quite mild with no extended periods of heat, receiving virtually no rain in either month. The 2018 vintage will be seen as another really good vintage in Clare and is possibly comparable to recent quality years such as 2016, 2013, 2010 and 2007.

The grapes for this wine were both machine and hand harvested, then transported to the winery, crushed, chilled and pressed as soon as possible prior to the juice being clarified by cold settling. It was then inoculated with a neutral, pure yeast culture and fermentation carried out in stainless steel temperature controlled tanks for on average 25-30 days. The wine was stabilised, blended and then filtered prior to bottling in July 2018.   


Einzellage Moculta Eden Valley Pinot Gris 2018

Sourced From One Of Eden Valleys Most Revered Growers from a single vineyard in the Moculta sub region. Fruit was picked in early hours of morning when temperatures were very low to ensure fruit remained crisp whilst being transported to winery. Crushed within 3 hours of picking it was chilled and pressed, as we needed to ensure the fruit was as pure of possible. After settling it racked off lees then warmed and inoculated with a select yeast strain. Fermentation occurred in tank at cool temperatures. Once the wine was clarified it was bottled and aged to ensure drinkability upon release.


Lunch Like Its Your Last Coonawarra Cabernet Sauvignon Nv

Sourced from a single vineyard in the Terra Rossa soils of Coonawarra, the fruit is picked at dawn by hand then sorted by bunch and run through the destemmer. Fermentation is conducted in large oak vats, followed by malolactic fermentation and ageing in a combination of Old and new American Hogsheads to preserve more fruit flavour.


Songlines Estates Adelaide Hills Pinot Noir 2017

We sourced fruit from a single vineyard which we felt was 2017’s standout Pinot Noir crop then whole bunch fermentation took place in a small open top fermenter. After fermentation and maceration the wine was racked into 1-3 year old French barriques. After natural malolactic fermentation, the wines were matured for a period of 6-9 months before final barrel selection, blending and bottling.
