Fowles Wines vineyards and winery are located in the dramatic granite landscape of Strathbogie Ranges region of Victoria. The ruggedly beautiful massifs its almost 600 metres above sea level and is characterised by ancient granite boulders dating back over 360million years. A huge granite peninsula, pushed up from the ocean, the Strathbogie Ranges has emerged as a truly distinct, high-altitude and cool climate region, helping us to produce intense wines that are elegant and full of character.

The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of six days to create a good balance between extracting the appropriate tannin for wine structure and retaining fruit drive and aromatics. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak.

1838 Reserve Cabernet Sauvignon 2021

Fruit was sourced from several well-known growers in South Australia. The different sites allowed us to pick the fruit over a period of 2 weeks allowing each vineyard to develop differing characters to compliment each other. The result is intensely flavoured wines due to the care and attention these growers give them. This wine was fermented warm and received pump overs on a daily basis during their fermentation. Select parcels of the wine received aging with oak contact to add another level ofcomplexity without over powering the fruit.

Fruit was sourced from our finest section of Cabernet Sauvignon from three outstanding vineyards all within the famed terra rossa soils we are so famous for. The 2019 vintage was excellent with warm dry summer followed by cool autumn temperatures which are perfect conditions from Cabernet Sauvignon from Coonawarra in particular. A quick flowering period with warm temperatures enables a great fruit set which gave us dark coloured wine with outstanding fruit concentration and acid structure. Fermentation was in both open and static fermenters, extended maceration was key to develop complexity between the fruit and tannins. Matured in a mixture of new and second fill French oak for 24 months.
