The ancient Greek philosopher Epicurus taught a way of living based on the belief that simple pleasures are the key to a tranquil and happy life; a philosophy that stills rings true today.
The Colonial Estate Explorateur Barossa Valley Shiraz 2021
The vineyards that make up Explorateur are based in the northwestern Barossa Valley. This is a belt of land/terroir that runs from just to the northwest of Tanunda – Marananga, Greenock, Moppa, Ebenezer, and through to Stockwell, just north of Nuriootpa. Cropping levels are kept low to ensure fruit flavour is focus. The same equipment that is accorded to our more expensive wines is made available to Explorateur. Fermentation is French in approach for up to two thirds of the wine made; the rest is vinified in a more Australian way.
Alexander Cameron Limestone Coast Cabernet Sauvignon 2021
The fruit was picked at optimum ripeness and transported to the winery and immediately crushed. Following on from this we fermented the juice on skins for 10-12 days to maximise colour and flavour extraction. The skins were then pressed gently and the pressings pumped back with the free-run juice. The wine was then fermented over a week then allowed to settle and was then racked off lees. The wine under went malolactic fermentation in barrel and then was aged in the same barrels for 12 months. The wine was blended and prepared for bottling with minimal filtration.
Normans Bin C163 Limestone Coast Shiraz 2021
Normans Wines is one of the oldest and most respected family names in Australian winemaking. Since 1853, when Jesse Norman planted his first vines in Adelaide, Normans Wines has developed a reputation for premium award winning Australian wines. Normans Wines is one of Australia’s founding winemakers.
Sourced from a premium vineyard located in the ancient limestone soils of the Limestone coast region of South Australia. The fruit was picked over a four-week period, which ensures blending options for more complex finished wine. The individual parcels were fermented in stainless steel open top fermenters, macerated on skins for seven days before being pressed then aged with a mixture of French and American oak. The wines were allowed to spontaneously undergo malolactic fermentation and were kept in individual batches until final blending to ensure only the finest wine of the vintage produced our bin series Shiraz.
Normans Holbrooks Road Merlot 2020
The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with three days of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having oak maturation. Great to drink now, but will mature and develop complexity over the short to medium term.
Songlines Estates Basket Pressed McLaren Vale Shiraz 2021
“Songlines” are invisible pathways which criss cross the land all over Australia and stretch across continents and ages. The exceptional wine is named Songlines as it perfectly encapsulates the importance of the land, people and knowledge learned over time and across continents.
Sourced from select premium vineyards with ages varying from between 40 – 110 years old. Each batch is treated differently to build complexity and all winemaking decisions were made at the time of harvest not predetermined to a recipe. Fermentation may be hot around 30 degrees or cool around 24 degrees, it may be in open top fermenters with piage by hand or with heading boards. Ferment may be warmed as it begins to cool or maceration on skins extended for up to 3 weeks. Wild ferments are encouraged although for parcels with higher alcohols cultured yeast is used to ensure complete fermentation. 25% of the total is fermented in barrel, giving more intense but softer rounder extraction of oak flavours and tannins.
A wine which has been designed to stand the test of time and if cellared well will last for around 10 or so years. If drunk whilst young allow the wine to breath prior to consuming.
