Chain of Ponds The Ledge Adelaide Hills Shiraz 2013
Deep plum with a purple plum hue. The aroma shows lifted spice, dark berry fruit and ripe plums with mild black pepper notes. Integrated with savoury oak notes with hints of vanilla, sandalwood and hints of dried oregano and sage. Intense bright fruits of blackcurrant, blackberry and plums are integrated well with savoury oak spice, nuances of cured meats linger and the palate finishes with lifted notes of pepper and savoury wood spice. Balanced bright natural acidity is lively and with the fine grained firm tannins gives exceptional structure with great ageing potential. Brilliant intensity of fruit with persistence and length of both fruit and savoury flavours without being overpowering.
Chain of Ponds Morning Star Adelaide Hills Pinot Noir 2013
Deep cherry red with a light garnet hue. Intensely complex nose with the earthiness of beetroot integrated with dark cherry and hints of rhubarb. A touch of fennel and dried herbs helps give a lift and balance to sweeter fruits. On the palate there is juicy cherry and blueberry fruits, beetroot and blood plum. The fruits are balanced and integrated with savoury dried herbs and nutmeg spice. Full bodied with firm, slightly drying but velvety tannins and balanced acidity, great fruit length with good savouriness.
Chain of Ponds The Corkscrew Road Adelaide Hills Chardonnay 2014
Pale green straw with youthful green hues. Elegant lifted nose displaying primary fruits of peach, rock melon, roast figs and hints of citrus and fresh apple. Secondary characters of subtle spicy oak and hints of buttered toast. Good balance of upfront generous fruit displaying stone fruits, citrus and apple supported by integrated savoury notes and a subtle creaminess on the finish from the partial malo-lactic fermentation. Balanced firm acidity with a gentle textural palate shows exceptional fruit length and great intensity with balanced oak.
Viking Grand Eden Valley Chardonnay 2014
Vibrant green with a pale straw hue.
Fantastic depth to its varietal expression yet still quite focused with white peach, nectarine and melon with an ever so gently touch of toasty oak.
Fresh and zesty in its youth with assorted citrus notes, this is in a word an “elegant” Chardonnay. The time on lees shows up with the wonderful depth of flavour whilst the natural fruit acidity shows through on the finish whilst remaining restrained by the slightest touch of French oak to add another layer of complexity.

Bright scarlet colour with bouquets of plum and pepper, ground complex spice and red licorice, savory sausage and leather characters, coffee and coccoa oak. A well integrated palate of raspberry, plum and chocolate coated fruit, firm but yielding tannins and supportive oak. Finishes clean and refreshing to plum and currant characters, peppered by sweet, gentle spice.

Selected from a single Vineyard in the Southern Adelaide Hills from the Sub Region of Kuitpo. Row and vine selection were performed prior to harvest and selective harvesting was employed in order to show only the best fruit in this wine. Vines on shallow soil with decreased shoot density and lighter crop levels were selected for increased fruit concentration. Harvested at optimal maturity the grapes were destemmed and crushed into small open fermenters, cool soaked for 2 days before beginning fermentation. During fermentation the must was pumped over 3 times daily for the duration of the 10 days spent on skins. The free run and pressings were separated and drained directly to barrels to complete primary ferment in oak followed by Malolactic fermentation. Aged and matured in oak for 20 months prior to bottling. Oak: 20 months 40% new French Oak 50% 2 and 3 year old French Oak 10% American Oak
Chain of Ponds Morning Star Adelaide Hills Pinot Noir 2013
Fruit for the Morning Star pinot is sourced from a number of premium Adelaide Hills Vineyards, with only the best barrels from the best vineyards selected for the Morning Star. A majority of the fruit (over 50%) is from a northerly facing vineyard from a G5V15 clone on a VSP trellis. The balance is made from equal portions of MV6 and D4V2 clone pinot noir also on a VSP trellis. The fruit was harvested in the early morning and destemmed only. It was cool soaked for 2 days prior to beginning fermentation. It was fermented with minimal cap management in open fermenters with a varietal enhancing yeast to preserve the fresh primary fruit aromas of pinot noir. The wine was pressed off skins after 6 days of fermentation, transferred into 60% new french and 40% 2 and 3 year old french oak. Malo-lactic fermentation was completed while in oak, the wine was then racked and returned post malo for maturation. After 9 months of maturation the best barrels from each parcel were selected for Morning Star with all other barrels dropping into the Section 400 Pinot Noir. The remaining barrels were left to mature for a further 7 months to aid in smoothness and integration before bottling. Oak: 60% New French Oak 40% Old French Oak
Chain of Ponds The Corkscrew Road Adelaide Hills Chardonnay 2014
Selected from a super premium vineyard on the South Eastern outskirts of Gumeracha with very gentle northerly aspect. The site is evidently cooler than other areas around Gumeracha. The vineyard is trained in a strict VSP and grown to produce the balance between fruit exposure and just enough leaf shading to protect the fruit from the heat in the middle of the day. A blend of 95 and I10V1 clones were hand picked at optimal acid and flavour balance to ensure the consistency of flavour and quality
The grapes were whole bunch pressed and gently squeezed to retain all of the delicate varietal characters. Fermented completely in 100% French oak barrels with a portion on full juice solids with partial wild fermentation and the other partially clarified and fermented with a Burgundian yeast isolate. The wine underwent 25% malo-lactic fermentation to soften the acid, this was followed by 12 months maturation on yeast lees with lees stirring for 6 months in oak to add depth and creaminess.
Viking Grand Eden Valley Chardonnay 2014
Hand picked from a single vineyard located on the outskirts of Angaston in Eden Valley. The wine was crushed and de-stemmed prior to the pressing process; French oak barriques were used for fermentation. The ferment was slow and cool with several weeks of lees contact post ferment. After the wine was clarified and filtered it was bottled to retain as much fruit flavour as possible. Only 300 dozen were produced highlighting the incredible attention to detail and care taken with our small batch winemaking. Made to drink upon release while the fruit flavour is at its most fresh and vibrant, although will develop more complexity over the next couple of years for those who enjoy their Chardonnay with a touch of age.

Harmulist South Australian Riesling 2015
Sourced from vineyards across the Clare Valley region in South Australia. Grapes were harvested when optimum flavour and acid balance were achieved. The ripening of the grapes was monitored with regular berry tasting by winemaker and grower. The fruit was harvested in the cool of the night and rapidly transported to the winery. After crushing and must chilling the free run juice was drained and clarified with minimum skin contact. This juice was then cool fermented between 12 – 15 degrees celsius with selected yeasts to enhance the delicate Riesling flavours. The wine was bottled young to retain as much fruit flavour as possible.

Single vineyard from the subregion of Kuitpo. It continues the cracking form of recent releases. Bold but elegant with cherryplum, spice and fennel favours, slithers of smoky/cedary oak then nestled comfortably within. A fine melt of tannin and confident length. Nails it.
