Tasting Notes:
Dark red to black in the glass, the nose is rich with notes of plum and liquorice which flow through to the palate with soft mouth feel and delicate oak integration. The palate is balanced and rich with a smorgasbord of spices... cinnamon, fennel, black pepper, cardamom with a real fleshy mouth full of plums.
Technical:

The wine completed the primary ferment in open fermenters and completed the secondary fermentation in Stainless Steel. The wine had a lot of natural tannin and hence we approached the oak very carefully. Maturation was completed with a short sharp hit of American oak to add some additional texture and complexity. Again being very careful not to over oak the wine. After a wet winter and spring the substantial ground water fed lush grape canopies. Bud burst through to veraison occurred easily and early. Mild summer conditions, with a few scattered heat spikes and cool nights helped develop wonderful flavours and colour with great varietal expression. In the winery the fruit showed high natural tannin levels so we opted for long ferments and minimal oak treatment.
