Palate shows restraint with a nougat and creamy elegance. Subtle flavours along with the typical Adelaide Hills acid line bring freshness and length.
Hilar Adelaide Hills Chardonnay is a thoroughly modern and elegant Australian Chardonnay that offers a creamy style with subtle flavours and approachable character. The restrained use of oak balances the quintessential Adelaide Hills fruit character.
The previous winter began with unseasonably dry conditions, but June and July had above average rainfall. Despite conditions being cold early in the season, soil temperatures rose to ensure an even budburst and good development of flowers. However, unseasonably cold conditions at the beginning of flowering resulted in poor fruit set in some varieties. In addition to record temperatures in late January, the region experienced two short heatwaves, with cooler conditions between the heat spikes. This combined with a mild autumn, resulted in good flavours, albeit a small crop.
Blocks from selected Piccadilly vineyards with their pure line and fine acid linear profile provide the backbone of this contemporary Chardonnay.
Carefully selected parcels of fruit were fermented individually in a combination of new and one year old 300L and 500L French oak barrels. Partial malolactic fermentation was used to build texture while retaining freshness. A selection of specific barrels was used to create a balanced blend.

Barrel fermented and matured 9 months in oak. Hilary brings an air of elegance and complexity in creamy, lees-derived aromas of honeysuckle and nougat with white peach and nectarine. There's a quiet power there, built around a solid foundation of quality fruit and oak and fresh, driving acidity.

Light bright yellow hue. Savoury biscuit aroma, a trace of smoky-reduction, the palate soft and accessible, dipping slightly in the middle, the finish carrying a touch of bitter tannin that doesn't spoil the effect.
