Tasting Notes:

Pale straw with green hues. A very attractive aroma dominated by lemon, lime and citrus nuances with touches of yellow peach. Intense fresh, crisp and dry; the palate reflects the nose and is brimming with the lemon, lime slate characters, all nicely balanced by a lovely natural acidity and mineral characters which give a crisp and refreshing finish.

Technical:

Picked in late February, the fruit was machine harvested in the early morning whilst temperatures were cool. After crushing, we fermented with the use of a yeast culture at controlled temperatures in stainless steel to ensure fruit vibrancy. We selected individual parcels to be bottled immediately to retain the natural fruit and acid balance produced.
