Tasting Notes:

Crunchy fresh raspberries and stonefruits are delicately balanced with a creamy supple mouthfeel from the bottle fermentation. The low dosage carries the crisp clean finish.


Technical:

The 2018 Adelaide Hills growing season was one of extremes. June was unusually dry, July very wet, bud burst was late and January and February were warmer than average. Despite this, a cool March led to a usual vintage harvest date in the last third of the month. Cool days and nights at this time, plus lower than average yields in the Piccadilly Valley, also helped in the development of good concentration and excellent flavours.

Hand-picked fruit was chilled before gentle, whole bunch pressing. Fermented in tank, the colourless pinot noir base wine was then assembled and tiraged, refermenting in bottle via méthode traditionnelle and disgorged after one year. The attractive salmon hue was achieved by including a small amount of dry pinot noir table wine at dosage, further enhancing the depth of colour, flavour and texture.
