Tasting Notes:

Deep red with purple hues in colour, the bouquet has ripe raspberries, plums, cassis and white pepper with underlying oak. On the palate the plums and raspberries jump out at you with distinct notes of blueberry and charred oak.

Technical:

Select parcels of fruit were sourced from several blocks across McLaren Vale which we felt added the components required to truly reflect the region. We picked the fruit in the cool of the night to ensure we maintained the regional flavours and aromatics that has made McLaren Vale Shiraz one of Australia’s most iconic regions. The wine was transferred to the winery where it was nutured with extended time on skins. The wine was crushed into open top fermenters where fermentation was initiated by wild yeasts found on the grape skins. Careful extraction and short post fermentation maceration is followed by pressing. The wine was then transferred into oak where maloactic fermentation is completed before racking and maturation. The wine was aged in a mixture of American and French oak then select barrels were chosen for the final blend prior to bottling.
