Tasting Notes:

Deep dark plum red with a slight purple hue. Aromas of ripe plums and dark cherries with a spicy cinnamon overlay and hints of vanilla and mocha. The palate is rich, with dominant blackcurrant and hints of dark plum and blackberry. Good tight acidity and smooth velvety tannins complement the spicy backbone of supporting oak. An underlying savoury character gives the wine an extra layer of complexity. The wine has great depth and length and would prove to be the ideal accompaniment to any red meat or game dishes or with a cheese platter.

Technical:

Fruit for the Pilot Block Shiraz was selected from a single carefully nurtured vineyard in Adelaide Hills. A region renowned for its full bodied yet elegant Shiraz. Fermentation on skins for eight days has extracted all the rich colour and flavour from the grapes and produced a rich flavoursome style with soft texture. The wine was matured in a mix of French and American oak for none months and is ideal to drink now, but will also benefit from and gain further complexity with short term cellaring.
