Cannon Ball Ridge Limestone Coast Shiraz 2017

Intense vibrant purple. Plum, raspberry and blackberry on the nose. The palate mirrors the aromas, with bright fruit flavours of raspberry and blackberry complemented with vanilla sweetness. The subtle oak carries through the entire lengths of the palate, finishing with a long lingering spice.


101 Margaret River Shiraz 2016

Bright spicy Shiraz aromas of white pepper and blackberry. The palate is medium bodied with a vibrant spicy lift and nicely resolved tannins to finish. A year in Margaret River for fine rich balanced reds, quite fleshy and with approachable tannins. A warm stretch during the growing season finished reds off with generous forward fruit and soft appealing structures.


Bin 1838 Premium Reserve Shiraz 2017

Full of dark fruit aromas including blackberry and plum. Freshly cut fruit flavours of blood plum, blackcurrant and cherries. A complex wine from well integrated oak which provides a spicy kick whilst the tannin balance is impeccable ensuring a smooth full bodied wine.


Bare Necessities Cabernet Sauvignon 2017

Deep ruby red with plum hues. Red berry, plums and a touch of savoury pepper along with a slight hint of oak. A lovely fruit driven style with a rich mouth filling palate showing abundant juicy fruit falvours. Red berries and plum characters are evident with more complex capsicum savoury notes, clean tannins and soft touch of oak. 


The Alexander Cameron Limestone Coast Cabernet Sauvignon 2017

Deep inky red in colour. Black currant mint and cedar are the prevailing characters with milk chocolate and pencil shavings common characters in high quality Cabernet Sauvignon from this region. The palate has black cherry and black currants providing the core whilst spearmint, spice and cedar add another layer of depth and complexity. Milk chocolate combines with finely grained tannins to provide a smooth ride and a touch of acid on this finish gives the wine a wonderful final kick.


Clare Hills Clare Valley Merlot 2017 By Neil Pike

Medium to deep red colour with lovely aromas of blackcurrants, dark cherries and plum pudding. The palate is soft, rich and approachable awash with the dark fruits mentioned above. Try with grilled scotch fillet with garlic mushroom sauce. 


Niche Merlot 2017

Vibrant crimson with red hue. Aromas of freshly crush black fruit, chocolate and a mild touch of oak and spice. The palate is round and generous. A succulent mid palate shows lovely plum and some cherry flavours with chocolate creating a rounder finish whilst being perfectly interwoven between natural fruit acid and tannin. Some spice ensures a fresh and lively finish. 


Bitch Rose 2017

Vivid magenta pink with ruby hue. Strawberries and cream screams the glass whilst raspberry aromas with perfumed rose petals ensure the aromas are well rounded and deliciously appetizing. A refreshing palate of strawberries and cream, strawberry dominates whilest raspberry creates added depth whilst soft and rounded the wine finishes with lovely natural fruit acidity balances the sweet fruits.

Technical:

Cannon Ball Ridge Limestone Coast Shiraz 2017

At Cannon Ball Ridge our winemaking approach begins with expressing the bright fruit qualities of each varietal and showcasing the distinct characteristics of the Limestone Coast region. Carefully selected grapes from our vineyards near Bordertown were gently pressed and slowly fermented. Aged with American oak for 8 months to allow the fruit aromas to develop and tannins to soften.


101 Margaret River Shiraz 2016

The fruit for this wine was sourced from the Calneggia Family Vineyards Estate Vineyard in the northern part of the Margaret River wine region. Fermented for seven days on skins, pressed and run off to oak, the wine was matured for twelve months prior to release.


Bare Necessities Cabernet Sauvignon 2017

The grapes for this wine were picked in the early hours of the morning from select vineyards across Victoria to ensure temperatures were as cool as possible. Crushed to rotary fermenters the grapes were then allowed to macerate for 2 days before inoculation and fermentation.  Pressed off skins 7 days later and allowed to go through the second malolactic fermentation. The wine has then had minimal handling prior to filtration for bottling.


The Alexander Cameron Limestone Coast Cabernet Sauvignon 2017

The fruit was picked at optimum ripeness and transported to the winery and immediately crushed. Following on from this we fermented the juice on skins for 10-12 days to maximise colour and flavour extraction. The skins were then pressed gently and the pressings pumped back with the free-run juice. The wine was then fermented over a week then allowed to settle and was then racked off lees. The wine under went malolactic fermentation in barrel and then was aged in the same barrels for 12 months. The wine was blended and prepared for bottling with minimal filtration.


Clare Hills Clare Valley Merlot 2017 By Neil Pike

The 2017 vintage was shaped by a cool, wet winter and spring with above average rainfall. Budburst was later than the “recent normal” due to the cooler conditions in September and consequently harvest was also a little late – we commenced vintage on March 3rd. Leading up to harvest January and February were both quite mild with no extended periods of heat and little rain. The 20mm we did receive on 20th January finished the vineyards off nicely.

The grapes for this wine were machine harvested, transported to the winery, de-stemmed into open fermenters and cold soaked for three days before fermentation began. The wine was pumped over twice daily during ferment for approx 7 days and this was followed by draining, pressing and then maturation in French oak casks for 14 months before racking and blending. The wine was stabilised and lightly filtered prior to bottling.   


Niche Merlot 2017

The fruit was sourced from premium vineyards located in South Australia. We picked in the cool of night when the fruit had reached its optimum ripeness then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with ta short period of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak. 


Bitch Rose 2017

Rose is one style of wine made easily with minimal intervention. Care is taken to softly press the grapes to avoid harshness and heavy tannin. Fermented in stainless steel and cold pressed to retain maximum fruit and acid balance.
