Tasting Notes

Normans Old Vine Barossa Valley Cabernet Sauvignon 2018

Vibrant crimson red. Strong mulberry and cherry fruit with under lying French oak which adds complexity to the bouquet. Full and vibrant fruit flavours of dark red berry and plum fill the mid palate. Soft tannins go well with the elegant under lying taste of French oak to make this a very easy drinking Cabernet Sauvignon destined to age well.

Chain Of Ponds The Amadeus Adelaide Hills Cabernet Sauvignon 2017

The palate is full bodied and displays seamlessly integrated dark berry fruit and savoury characters which fill out the palate to give a well rounded wine with exceptional fruit weight and length. Good linear acidity from the cooler vintage and structural velvety tannins give drinkability now along with great ageing potential.

The Alexander Cameron Limestone Coast Cabernet Sauvignon 2018

Deep inky red in colour. Black currant mint and cedar are the prevailing characters with milk chocolate and pencil shavings common characters in high quality Cabernet Sauvignon from this region. The palate has black cherry and black currants providing the core whilst spearmint, spice and cedar add another layer of depth and complexity. Milk chocolate combines with finely grained tannins to provide a smooth ride and a touch of acid on this finish gives the wine a wonderful final kick.

Halcyon Birds Margaret River Cabernet Sauvignon 2016

The bouquet is complex and intense. Black forest floor berry fruits, tobacco, earth and dark chocolate characters abound. The palate is rich, mouth filling and concentrated. The structure is firm yet soft. Ready to drink now however will continue to evolve for many years when cellared correctly.

"No shortage of cassis and blackberry flavours with a strong herbal-minty overlay - maybe too much for some. It's fuller-bodied, tannic and rich, needing more time to find its groove."

Technical

Normans Old Vine Barossa Valley Cabernet Sauvignon 2018

This wine will be drinking beautifully upon release although as expected from a Norman’s premium red, will develop well in the bottle with careful cellaring over the next 7+ years.

The Colonial Estate Etranger Barossa Valley Cabernet Sauvignon 2018

Grapes were specifically sourced from the area around our favourite sub region of the Barossa – Greenock. Its hard country with the shallow grey sandy soil over red clay producing small bunches of intense, non-herbaceous Cabernet Sauvignon. Cropping levels were low and much of the older vineyards were hand picked and selected by vigneron and winemaker especially for the high fruit intensity of the individual grapes. 2018 was another stand out vintage from a quality point of view low yields meant incredible intensity of flavour and colour, we expect 2018 will go down of one of the best in recent times. We use extreme cold maceration to extract as much natural fruit flavour as possible and use open top fermenters and hand plunge keeping our old-world winemaking philosophy front of mind during the entire process to ensure only the finest wine is aged in barrel for 12 months prior to final blending and minimal filtration.

Chain Of Ponds The Amadeus Adelaide Hills Cabernet Sauvignon 2017

Selected from McLaren Range vineyard at Kuitpo in the southern Adelaide Hills, a North Facing Aspect with North-South row orientation and an elevation of 360m. Soil is a sandy loam with

ironstone gravel over weathering sandstone, Clone is G9V3 and the canopy is managed with a single catch wire and assisted sprawl. The exceptionally cool 2017 vintage meant the Cabernet ripened very late in the season allowing the slow development of excellent varietal character and great savoury complexity.

The grapes were destemmed and cold soaked for 2 days prior to fermentation. The fruit was fermented in traditional openfermenters and pumped over twice daily with a few extra pump overs during peak ferment. 30% of the free run was drained off after 7 days while the balance remained on skins for a further 3 days. The wine was pressed off skins with around 1 Baumé left and transferred straight to 100% French oak with 30% new barrels to allow fermentation and MLF to complete. The wine was left on full lees for 18 months to build texture and mouthfeel before bottling.

The fruit was picked at optimum ripeness and transported to the winery and immediately crushed. Following on from this we fermented the juice on skins for 10-12 days to maximise colour and flavour extraction. The skins were then pressed gently and the pressings pumped back with the free-run juice. The wine was then fermented over a week then allowed to settle and was then racked off lees. The wine under went malolactic fermentation in barrel and then was aged in the same barrels for 12 months. The wine was blended and prepared for bottling with minimal filtration.

Fruit is hand picked and fermented in open vessels, plunging the cap by hand to gently extract desirables. This Cabernet is matured for 18 months in new and used French oak barriques and Hogsheads.

After the cold and rainy winter period in 2016 the Barossa had a spring which is one of the wettest on record. This set up a perfect 2017 crop and the mild weather pattern we encountered through veraison was ideal with top up rain fall during early 2017. The dry Indian summer finished off the growing season creating wonderful ripening conditions. The fruit was crushed, de-stemmed and left on skins in fermenters for 7 days. A slow ferment then occurred with temperatures ranging from 15-18C, the wine had open pump-overs to ensure fruit intensity. Once fermentation was completed the wine was pressed into old French and American barrels. The wine spent 18 months in oak to mature until I felt the time was right to bottle. Final barrel selection ensured only the best of the best wine made it into the final blend before bottling with minimal fining or filtration.
