Songlines Estates Basket Pressed McLaren Vale Shiraz 2019

“Songlines” are invisible pathways which criss cross the land all over Australia and stretch across continents and ages. The exceptional wine is named Songlines as it perfectly encapsulates the importance of the land, people and knowledge learned over time and across continents. Sourced from select premium vineyards with ages varying from between 40 – 110 years old. Each batch is treated differently to build complexity and all winemaking decisions were made at the time of harvest not predetermined to a recipe. Fermentation may be hot around 30 degrees or cool around 24 degrees, it may be in open top fermenters with piage by hand or with heading boards. Ferment may be warmed as it begins to cool or maceration on skins extended for up to 3 weeks. Wild ferments are encouraged although for parcels with higher alcohols cultured yeast is used to ensure complete fermentation. 25% of the total is fermented in barrel, giving more intense but softer rounder extraction of oak flavours and tannins. Before being put together the individual batches are matured for a minimum of 12 months in mainly new French barrels. A wine which has been designed to stand the test of time and if cellared well will last for around 10 or so years. If drunk whilst young allow the wine to breath prior to consuming.

Zagora Estate McLaren Vale Cabernet Sauvignon 2019

The McLaren Vale Region is regarded as one of Australia’s most consistent quality wine producing regions. Situated between gently sloping ranges and the pristine South Australia coast, the Mediterranean climate is ideal for premium grape growing. Premium Cabernet Sauvignon from a single McLaren Vale vineyard was vinified using a combination of fermentation styles and French oak, to highlight the varietal and regional characteristics. It tastes great now and will reward cellaring for 3 to 5 years. 

Serafino Goose Island McLaren Vale Shiraz 2019

The fruit was sourced from a combination of our Estate grown vineyards including Malpas and Little Road vineyards in McLaren Vale, South Australia. Matured in 2 year old hogsheads. American oak (70%) and French oak (30%).

The fruit was destemmed and fermented in a combination of stainless steel and open fermenters using selected yeast strains. The ferments remained on skins for a period of 8 days in order to keep the tannins soft and supple and the fruit bright and fresh. Post ferment the wine was pressed and allowed to undergo malolactic fermentation in tank. After malolactic fermentation, the wine was racked to seasoned French and American oak hogsheads (300L) for a period of nine months.

Songlines Estates Basket Pressed McLaren Vale Cabernet Sauvignon 2016

2016 will be remembered for rich and intense flavours and perhaps Cabernet Sauvignon will be the hero variety of the vintage. After handpicking whole bunches we allowed the fruit to be cold macerated for 24 hours to ensure brightness and depth of flavour. After this fermentation occurred in small open top fermenters with specific yeast strains and we hand plunged over a two-week period. Then we basket pressed and drained into 30% New French oak and 70% older American oak hogshead barrels for a period of 12 months before bottling with minimal fining or filtration to ensure the wines true character was fulfilled.

Normans Chais Clarendon McLaren Vale Shiraz 2016

Fermented in stainless steel, small volume fermentors to maintain strong fruit flavour from skins. Hand plunged twice daily for seven days then transferred into American and French oak barrels for the remainder of ferment then spent 14 months to allow full flavour development.
