Thorn Clarke Terra Barossa Cabernet Sauvignon 2017
Deep red with hints of garnet at the edge of the glass. Blackcurrant and liquorice fruit paired with subtle leaf and savoury spice on the nose. The palate is ripe and rich with balanced fruit and oak. Varietal flavours of cassis, nutmeg and plum lead to fine grained, savoury tannins.
The Colonial Estate Etranger Barossa Valley Cabernet Sauvignon 2019
Deep crimson purple in colour, Lovely dark rich black fruit on the nose open up to show varietal notes of cassis and blackcurrant as stand out features. Powerful fruit purity and varietal notes cassis and blackberry and blackcurrant dominate while seamless oak and fine tannins provide line and length to this smooth voluptuous wine.
The Colonial Estate Etranger Barossa Valley Cabernet Sauvignon 2019
Grapes were specifically sourced from the Western Barossa Valley. It's hard country with the shallow grey sandy soil over red clay producing small bunches of intense, non-herbaceous Cabernet Sauvignon. Cropping levels were low and much of the older vineyards were hand picked and selected by vigneron and winemaker especially for the high fruit intensity of the individual grapes. 2019 was another stand out vintage from a quality point of view although we had the lowest yields in recent history which meant incredible intensity of flavour and colour. We use extreme cold maceration to extract as much natural fruit flavour as possible and use open top fermenters and hand plunge keeping our old-world winemaking philosophy front of mind during the entire process to ensure only the finest wine is aged in barrel for 12 months prior to final blending and minimal filtration.
Thorn Clarke Terra Barossa Cabernet Sauvignon 2017
The range is named is named in honour of the rich soils in the region which are a major factor in the Barossa’s reputation as one of the great wine regions of the world. An above average wet spring and cooler than average summer temperatures led to a later start to picking than normal. This combined with a long and mild ripening period meant that our fruit developed to a beautiful level of maturity on the vine. This has led to outstanding flavours and perfumed, expressive wines. The colours are vibrant and tannins are silky with a fine savoury finish. The grapes are crushed and de-stemmed into fermenters. Yeast is added immediately once in fermenter and the ferments are pumped over twice daily to maximise colour, tannin and flavour extraction. Cooling is used to ensure ferment temperatures remain in the 22-25 degree Celsius range which will allow the fruit to display maximum fruit expression. Pressing then occurs approximately seven days after crushing and the wine is then put into French oak for maturation for up to 12 months.
Conquest Coonawarra Cabernet Sauvignon 2018
Select parcels of fruit were sourced from the iconic terra rossa soils of Coonawarra for this wine. We picked the fruit at optimum ripeness in the cool of the night in order to retain the fruits natural acidity and of course the regional flavours and aromatics that the Coonawarra is world famous for. The wine was transferred to the winery where it was hand reared with extended time on skins. Hand plunging, cool preferment maceration and the use of select yeast, coupled with long post ferment maceration on skins followed the traditional techniques more often used in French winemaking. The wine was aged in new and old oak then select barrels were chosen for the final blend prior to bottling.
Basedows Of Barossa Cabernet Sauvignon 2018
A mild winter and a drier than normal spring led to an early flowering and fruit set for the Barossa vineyards. A hot start to summer meant that ripening occurred early and the vintage started on the 9th February with all varieties ripening in short succession. The conditions led to an excellent growing season with the reds full of density, colour and rich flavour. The Cabernet grapes were the last variety harvested and despite lower than average yields, the quality of the wines from the 2018 Barossa vintage is set to be exceptional.
Alexander Cameron Limestone Coast Cabernet Sauvignon 2019
The fruit was picked at optimum ripeness and transported to the winery and immediately crushed. Following on from this we fermented the juice on skins for 10-12 days to maximise colour and flavour extraction. The skins were then pressed gently and the pressings pumped back with the free-run juice. The wine was then fermented over a week then allowed to settle and was then racked off lees. The wine under went malolactic fermentation in barrel and then was aged in the same barrels for 12 months. The wine was blended and prepared for bottling with minimal filtration.
