Niche Cabernet Sauvignon 2021

Crimson with magenta/purple hues. Classic, varietal aromas of cassis with some choc-mint all work seamlessly with plums and soft oak undertones. A medium bodied wine with a rounded fruit driven palate that features rich, round velvety tannins, with plum, cassis and cherry flavours whilst the oak is soft and just a passenger.


The Darrell Victorian Cabernet Sauvignon 2020

Dark red with crimson hues in colour. The nose displays lifted pepper and spicy dark red cherry fruit character backed by top class oak. Dark red berries with a hint of cassis. A richly flavoured wine filled with juicy blackberry and blue berry fruit and top class but subtle oak backing it up, giving the wine a complex tannin backbone with a smooth silky palate.


Alexander Cameron Limestone Coast Cabernet Sauvignon 2019

Deep inky red in colour. Black currant mint and cedar are the prevailing characters with milk chocolate and pencil shavings common characters in high quality Cabernet Sauvignon from this region. The palate has black cherry and black currants providing the core whilst spearmint, spice and cedar add another layer of depth and complexity. Milk chocolate combines with finely grained tannins to provide a smooth ride and a touch of acid on this finish gives the wine a wonderful final kick.


Songlines Estates Leylines Cabernet Sauvignon 2020

Impenetrable dark red with light red and purple hues around the edge. This wine is rich with sweet licorice and black berry fruit aromas with a hint of vanilla from well-integrated oak. Finely structured wine with hints of cinnamon and chocolate nuances. The palate shows elegance and length with dark plum fruit and cashew, with a smokey oak influence. There is a lot of complexity of flavours and mid palate richness. The obvious finesse and length of this wine will show early in its life and continue to drink well over the medium term.


Normans Holbrooks Road Cabernet Sauvignon 2021

Deep red purple colour. Lush and complex aromas of red berry work well with subtle notes of savoury pepper and oak. Rich opulent mouth filling palate carries flavours of red berries and some hints of varietal flavours of capsicum. Quite savoury with clean tannins and soft oak only just noticeable but providing further length to this fruit driven style of Cabernet Sauvignon.


Technical:

Niche Cabernet Sauvignon 2021.

The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of six days to create a good balance between extracting the appropriate tannin for wine structure and retaining fruit drive and aromatics. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak.


The Darrell Victorian Cabernet Sauvignon 2020

Sourced from premium vineyards across Victoria’s premium viticultural sub regions. The fruit was crushed then underwent cold macerating. Fermented in open top fermenters with regular pump over’s to extract both colour and tannin. Following another week of maceration the dry free run is drained to tank. The skins are then pressed and the pressings transferred to the same tank, the wine is then racked with select parcels going into barrel. The wine is aged in older oak then bottled after maturation with minimal fining and filtration.


Alexander Cameron Limestone Coast Cabernet Sauvignon 2019

The fruit was picked at optimum ripeness and transported to the winery and immediately crushed. Following on from this we fermented the juice on skins for 10-12 days to maximise colour and flavour extraction. The skins were then pressed gently and the pressings pumped back with the free-run juice. The wine was then fermented over a week then allowed to settle and was then racked off lees. The wine under went malolactic fermentation in barrel and then was aged in the same barrels for 12 months. The wine was blended and prepared for bottling with minimal filtration.


Songlines Estates Leylines Cabernet Sauvignon 2020

“Songlines” are invisible pathways which criss cross the land all over Australia and stretch across continents and ages. The exceptional wine is named Songlines as it perfectly encapsulates the importance of the land, people and knowledge learned over time and across continents.

Leylines is made with the same meticulous care and attention as Songlines and Bylines but with a smaller price tag. The grapes come from vineyard blocks younger than those used for Songlines and Bylines and the fruit has been specifically hand chosen for its approachability as a young wine. 2017 saw the selection of some older material as part of the blend to add some more complex character and add longevity. The winemaking uses warmer ferments in traditional open fermenters with hand “piage” 4 times each day to soften the palate, and the use of older barrels to impart less oak dominance. The wine is matured for 12 months in second and some third use French barrels to provide softer rounder oak character.

This style has softer tannins suggesting cellaring for the medium term and earlier drinking in mind. Balanced and fully approachable on release it will hold for 4-6 years.


Normans Holbrooks Road Cabernet Sauvignon 2021

The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with three days of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with mature French oak.
