Intense deep purple with red rim. Traditional upfront fruit style of Cabernet Sauvignon with lifted aromas of ripe red and black berry fruit with a hint of blueberry. The aromas of coffee, chocolates and aniseed provide further complexity on the nose. Full and vibrant fruit flavours of dark red and black berry are the highlight whilst more profound notes of freshly cut plum which fill the mid palate. Soft tannins go well with the elegant under lying taste of oak to make this a very approachable and easy drinking Cabernet. A very good quaffing wine that would be perfectly matched with roast lamb stuffed with garlic and Rosemary.

Normans Bin C163 Limestone Coast Shiraz 2019
Normans Wines is one of the oldest and most respected family names in Australian winemaking. Since 1853, when Jesse Norman planted his first vines in Adelaide, Normans Wines has developed a reputation for premium award winning Australian wines. Normans Wines is one of Australia’s founding winemakers.
Sourced from a premium vineyard located in the ancient limestone soils of the Limestone coast region of South Australia. The fruit was picked over a four-week period, which ensures blending options for more complex finished wine. The individual parcels were fermented in stainless steel open top fermenters, macerated on skins for seven days before being pressed then aged with a mixture of French and American oak. The wines were allowed to spontaneously undergo malolactic fermentation and were kept in individual batches until final blending to ensure only the finest wine of the vintage produced our bin series Shiraz.
Niche Merlot 2019
The fruit was sourced from premium vineyards located in South Australia. We picked in the cool of night when the fruit had reached its optimum ripeness then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with ta short period of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak.
Watershed The Farm Margaret River Classic Red 2016

Berton Vineyards Foundstone Shiraz 2019
Our local reds began with Shiraz comic in on 17th March, rather late compared to the last 8-10 years. With the latest of the vintage, growers found it hard to reach the desired sugar specifications however with cooler conditions looming, the decision was made to pick on fruit and seed ripeness on a parcel by parcel basis, ensuring the best possible quality was maintained. The saw is apply almost double our normal attention, requiring =higher turnover regimes to aid colour stabilisation & tannin extraction kit of the skins whilst maintaining the desired characters.
The parcels were fermented separately in stainless steel potters for 4-6 days between 26 and 30 degrees and pumped over onto premium French toasted and untoasted oak chips. The wine was then pressed off skins at 1 brume and left to ferment until dry, then racked onto French oak staves and inoculated with malolactic bacteria. After MLF was complete the wine was then clarified, the best parcels were selected and blended.
1838 Reserve Cabernet Sauvignon 2019
Fruit was sourced from several well-known growers in South Australia. The different sites allowed us to pick the fruit over a period of 2 weeks allowing each vineyard to develop differing characters to compliment each other. The result is intensely flavoured wines due to the care and attention these growers give them. This wine was fermented warm and received pump overs on a daily basis during their fermentation. Select parcels of the wine received aging with oak contact to add another level ofcomplexity without over powering the fruit.
