Tasting Notes:

Almost black with purple flashes. Rich red and black berry fruit with lifted spice aromatics. Subtle yeast complexity and light oak are also showing through. A generous and soft palate with black berry and ripe cherry notes. Medium to full weight with lovely soft tannins and a fine persistent mousse.

Technical:

This wine underwent cool fermentation on skins then was pressed into stainless steel after six days to optimise colour and flavour. The wine was matured in stainless steel to maintain freshness with some light oak maturation; subtle yeast contact and secondary fermentation ensure that a balanced and well-integrated sparkling wine is produced. This skillfully blended wine utilises younger wines to impart lifted primary fruit characters with older wines to soften and add complexity.

There was a good bubbly selection on offer but we did note that Normans Bubbly Shiraz was the most popular welcome drink on the day. Since Tasting Australia we have consumed and enjoyed all of the bottles of Normans Bubbly Shiraz that we had in the society's cellar. Have now ordered and received another carton. I bought this instead of Paringa's Sparkling Shiraz, a very soft Shiraz with a full fruit flavour and a slight sweetness which I have really enjoyed in the past. It was labelled as a 'bubbly shiraz' and had a screw cap which was a bit of a surprise. The wine went flat quite quickly after it was poured and was too dry and thin for me. Not one that I enjoyed.
