Tasting Notes

Rovalley Ridge Barossa Valley Shiraz 2017      

Dark ruby in colour with purple hues. Berry, plum and blackberry fruits with spice enhanced by American and French oak on the nose. There are fruit flavours reminiscent of dark chocolate, pepper and blackcurrant which combine with the sophisticated fine and savoury tannins. This is a classic example of a full bodied Barossa Shiraz.

  

Normans Chandlers Hill Chardonnay 2021 

Bursting with tropical fruit notes this is a fruit driven style with lovely ripe stone fruit intensity. Tropical fruits dominate while some stone fruit provides good depth and natural acidity gives a refreshing kick to this delicious wine. 

      

Niche Sparkling Red Nv            

Deep crimson colour with brick red mousse and a fine bead. The aroma displays ripe plums, earthy notes and spice. Mouth filling and luscious flavours of plums and prunes with hints of liquorice. Soft, creamy with a persistent cherry, chocolate and spice finish.


Alexander Cameron Limestone Coast Sauvignon Blanc 2020   

Light yellow to lime green. A fruit salad nose featuring beautiful notes of peach, melon, pineapple and citrus. The palate is rich and has juicy flavours of lime, guava and pineapple with a wonderful texture, which is almost crunchy.


Clarendon Hills Bakers Gully Syrah 2012

Blackened crimson. Perfumed roast meats and nuances of spice overlay the otherwise liquorice and black currant dominated expression. Its elegant yet full of vibrancy and its youthful vigour entertains the viewer.A long and aromatically scented structure progressively delivers the liquorice and spiced fruit in a persistent fashion. Velvety tannin and balanced acidity echoâs both potential and proposition. Smoothed extract and overall polish ensures immediate satisfaction.


Conquest Clare Valley Riesling 2018

Clear to medium straw with a bright golden hue. Varietal and regional characters of lemon, lime and citrus on the nose. Perfectly reflecting the nose the palate opens with lemon/lime and citrus notes. A wonderful touch of dried fruit flavours of apricot, peach and some honey blossom. This cellar release has good age which has mellowed the acidity nicely as its integrated creating a beautifully drinkable soft Riesling.


Olssen Of Watervale The Olssen Six Clare Valley Red 2017       

Black with currant red flashes. Fragrant nose displaying sweet red berries with plum and mulberry highlights. Spicy and fruit driven with freshly cut plums along with dark cherry flavours. Soft, savoury tannins and good acid add structure and length to this voluptuous wine. Well-integrated oak provides the perfect backbone with tannins and acid all melting into one another.


Normans 1853 Museum Release South Australia Cabernet Sauvignon 2013

Deep dark crimson red. Wonderfully expressive when allowed to breathe, blackberries and dark cherry notes dominate while cassis, violets, mocha and cedary oak provide some influence. Finely structured wine although has great generosity and still quite rounded with juicy fruit flavours of mulberry and blackberry with hints of cassis, spice and oak all playing key roles. The palate shows elegance and length with fine, well integrated tannins. There is a lot of complexity of flavors yet the over all balance ensures a smooth lush style of wine that drinks well upon release.

Our grapes are machine harvested early in the vintage to ensure fruit intensity is paramount. We crushed, chilled and fermented the juice at controlled temperatures, and it was cellared in stainless steel to ensure fruit vibrancy was maintained. The wine was bottled under pressure to ensure the bubbles last all those long summer nights.


Alexander Cameron Limestone Coast Sauvignon Blanc 2020   

The individual parcels were machine harvested in the cool of the night and then crushed and pressed on arrival to the winery. Once settled, the clear juices were racked off and inoculated with aromatic yeast strains. One finished ferment; the resulting wines were blended together and prepared to bottle.


Clarendon Hills Bakers Gully Syrah 2012

This is Roman Bratasuik's entry level Shiraz intended for early drinking sourced from younger dry grown vines. Maturation takes place in French oak (85% new) for a period of 18 months.


Conquest Clare Valley Riesling 2018

Fruit was sourced from selected grower’s vineyard blocks in the Clare Valley. After the grapes were destemmed and transferred to the tank press where the free run juice was separated and the remaining fruit lightly pressed. The juice was then allowed to cold settle to a clear state then racked into stainless steel fermenters. The juice was the inoculated with selected yeasts to add the required complexity and aromaticity. The ferment period was 14 days while the wine was kept at between 11-13 degrees. After a short period of yeast contact the wine was racked for final blending before being bottled to capture the fruit then cellared for future release.


Olssen Of Watervale The Olssen Six Clare Valley Red 2017       

Carefully selected parcels of fruit were selected from the Watervale region in the Clare Valley. We picked in the evening and decided to macerate over night and crush the fruit early the next morning. The wine was fermented in older French barrels, and left to age in oak before we selected only the best barrels of the vintage for inclusion in the final six blend then the wine was blended and bottled with minimal fining or filtration.  


Normans 1853 Museum Release South Australia Cabernet Sauvignon 2013

The grapes were hand picked in small parcels and kept separate to ensure the best possible flavours were extracted from each parcel. The grapes were fermented in small open top fermenters and hand plunged daily. Once pressed the individual batches were left to mature in a combination of old and new French oak hogsheads. The best barrels were isolated from the rest of the blend for our Chais Clarendon release to be used for our Museum Release Series and spent up to 4 years in barrel before being bottled and aged further before release.
