The Chain of Ponds story began in 1985 with the planting of a small Pilot Block to test the suitability of several emerging grape varieties to the cool climate of the Chain of Ponds vineyards in Gumeracha. The success of that exercise and the skill of our winemaker have captured the unique characteristics of these varietals in an innovative range of wines. The "Pilot Block" label is our recognition of that pioneering vineyard.
The cool climate Adelaide Hills has a reputation for producing elegant fruit driven Sauvignon Blanc and this is a classic example of the style.
The grapes were harvested in the cool of the morning to retain their fresh herbaceous qualities and were gently crushed in the winery to extract the delicate fruit flavours, without absorbing the harsh skin tannins. The juice was fermented using two varietal Sauvignon Blanc yeasts which have enhanced the natural fruit characters, to produce a wine with an elegant tropical fruit palate whilst maintaining the underlying herbaceous characters of green beans, snow peas and freshly cut grass.
