DESCRIPTION
The wines are made by Greg Clack an Australian Young Winemaker of the Year Finalist, and are made with the same care that has won him many medals and much acclaim for the wines he makes for some of the highly respected labels in McLaren Vale and the Adelaide Hills - all the proof you need that these are quality wines and unbelievable value.
The Sauvignon Blanc was sourced from premium Adelaide Hills vineyards and the Semillon from an 80 year old planting in the Barossa. They have combined to produce this stylish, refreshing yet elegant wine.
The old vine Semillon was deliberately picked early in the season to retain the variety's natural acidity which gives the wine life and balance, this had the added advantage of missing the disease pressure so prevalent later in the season. In contrast the Sauvignon Blanc was left to ripen to optimal maturity to ensure we captured the tropical fruit characters which complement the Semillon's crisp acidity.
In the winery the grapes underwent a cool fermentation to retain all the typical varietal mineral and citrus of the Semillon. These qualities combine with the tropical fruits and herbaceous characters of the Sauvignon Blanc, to provide a flavour balance in the wine, which is complemented by the firm acidity, excellent palate weight and a crisp, clean finish. Pale golden straw with bright green hues. Very aromatic and lively, intensely fresh citrus and green apple, balanced with gooseberry, guava and lychee aromas and a hint of pineapple. A well balanced wine with a very tight acid structure. Upfront tropical fruits with lively green apple acidity on the middle palate. The wine finishes with more citrus fruit and textural minerality with balanced acidity and a gentle roundness.
Serving suggestion- This wine has great fruit length and tight acidity which make it an ideal wine to enjoy with seafood.
