DESCRIPTION
The wines are made by Greg Clack an Australian Young Winemaker of the Year Finalist, and are made with the same care that has won him many medals and much acclaim for the wines he makes for some of the highly respected labels in McLaren Vale and the Adelaide Hills - all the proof you need that these are quality wines and unbelievable value.
The cool climate of the Adelaide Hills is ideally suited to Chardonnay, producing elegant stylish wines with great fruit and crisp acidity.
The grapes for our 2011 Chardonnay were selected from a low yielding premium vineyard in the sub region of Gumeracha in the Adelaide Hills. The mildly steep western facing slope allows the more tropical spectrum to be evident in the final wine. The Chardonnay was picked at optimal maturity with good natural acid balance in the early hours of the morning to retain freshness.
The grapes were delivered to the winery at dawn and crushed in an air bag press with the free run and pressings being separated.
The parcels were fined and fermented separately, with varietal neutral yeast used to retain the varietal characteristic of the grapes while adding subtle yeast strain characters. Post fermentation one parcel was put through secondary malo-lactic fermentation while the other parcel was stored on lees for three months. The wines were blended post secondary fermentation to give a balance of flavours and acid structure. Bottled at optimal freshness to retain true fruit character in the wine.
Vibrant golden green straw with brilliant clarity. Perfumed nectarine and white peach with nuances of quince and honey balanced by a gentle citrus zing. Well balanced wine with up front rounded stone fruits and hints of spice. The fruit continues right through to the finish of the wine where it changes to more honey and citrus notes. Very good fruit weight and a lively citrus zing give length and a powerful flavour persistence which allows this wine to be enjoyed with or without food.
