Térroir ( ter-war): A "terroir" is a group of vineyards ( or vines ) from the same region, belonging to a specific appellation, and sharing the same type of soil, weather conditions, grapes and wine making savoir-faire, which contribute to give its specific personality to the wine.

The Térroir collection is about bringing parcels of outstanding varietal wines from Australia's finest wine growing districts.

The fruit for our chardonnay was sourced from two vineyards .. one high in the King Valley and one in Central Victoria. The grapes were harvested at night to keep them as cool as possible. Half the juice was fermented in chilled stainless steal tanks and the other half in French oak barrels. Further maturation was carried out in the oak for a period of nine months. During this maturation the lees (or natural fall out) of the wine were stirred each month to give the flavour of the wine a creamy texture. The aroma of the wine is filled with fresh melon and peach. The wood is subtle as it should be. The flavour is long and persistent with a lovely crisp finish.
