Brilliant pale green appearance with typical Clare Valley Semillon and Sauvignon characters on full display, including nettles, stonefruit, lemon, and mineral. The palate is crisp, dry and fresh; the balanced acidity ensuring a clean, bright finish. Try this with Asian style steamed scallops with ginger and shallots. A fantastic combination. Drink now and over the next 2 summers.
100% Clare Valley, Semillon 54% Sauvignon Blanc 46%. Production: 2,600 cases.
The 2009 vintage saw a welcome return to normal seasonal conditions for the Clare Valley. Most of South Eastern Australia was affected by the continuance of a severe drought with crop levels being reduced once more with devastating bushfires experienced in Victoria creating havoc, but thankfully the Clare Valley was immune to all this. Good rains in December followed by quite a mild summer allowed the grapes to ripen quite steadily and develop excellent flavour concentration while retaining good levels of natural acidity.
The grapes for this wine were both machine and hand harvested, transported to the winery, crushed, chilled and pressed as soon as possible prior to the juice being clarified by cold settling. It was then inoculated with a pure yeast culture, with fermentation carried out in stainless steel temperature controlled tanks for on average 25 to 30 days. The wine was stabilised, blended and then filtered prior to bottling.
