A fresh and lively sparkling wine with great fruit weight on the palate it exhibits the same fine tropical fruit aromas as the bouquet with an underlying flinty note typical of Awatere Valley fruit. It has fine persistent bubbles and a clean refreshing yet soft finish. Pale green straw with lovely green hues and brilliant clarity. Made for your immediate pleasure, however will continue to soften and develop more complexity over the next 2 years.
Parcels of fruit from the Awatere and Wairau Valley's in Marlborough were selected and harvested then gently pressed to retain varietal character and freshness, which is something we made a priority with this wine. Winemaking techniques included fermentation with solids as well as cool and warm fermentation, these techniques improved texture and softness without sacrificing the Marlborough Sauvignon Blanc varietal expression, which was the key to this wine.
Superb to be served chilled alongside a number of seafood dishes including crayfish, mussels and oysters. I find a match of a steaming pot of mussels with lobster bisque and brandy sauce conjures up visions of the iconic Marlborough coastline where this wine was born.
