Tasting Notes:

This 2011 Barossa Cabernet is a deep, dark red brick colour. It has aromas of green bean, dried herbs and dusty cedar like oak. There are lively blackcurrant characters on the front palate and this fruity character is balanced by spicy, chocolatey oak. It has great varietal  grainy tannins that persist well after the wine has left the mouth.     

Technical:

This vintage had a cool, slow ripening period which has in turn produced elegant red wines. The fruit was harvested at night when the fruit was deemed to be ripe by our winemakers. Warm fermentation was carried out in a mix of patter and open fermenters. Extended time on skins adds to the texture of the wine. It was matured in French oak for ten months prior to blending and bottling.
