Tasting Notes:

Densely coloured dark red. Lifted aromas of sweet varietal blackcurrant and mulberry fruit, which are complimented with beautiful complex cedar oak. The medium bodied palate offers flavours of dark plum and blackberry with minty regional notes complemented by black pepper and cedar, exceptional fruit sweetness is balanced by the savoury oak, whilst firm acid and a finely grained tannin structure add further complexity.

Technical:

Fruit was sourced from select vineyards located in South Australia's prime viticulture regions including, McLaren Vale, Barossa and limestone Coast. The select locations provided a perfect basis to create a wine of wonderful finesse and varietal character. The fruit was picked and then fermented with select parcels having contact with skins to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcel receiving oak maturation.
