Tasting Notes:

Deep red colour, with the faintest tinge of purple. Toasty vanillin oak from partial barrel ferment, black pepper, spices and concentrated ripe dark berry fruits with a touch of dark chocolate. This is old school McLaren Vale Shiraz the way its meant to be with dominant fruit flavours of blackberry, mulberry and black currant these concentrated rich dark berry fruits persist and lead to chocolate characters complemented by a touch of toasted nutty oak and vanillin complexity. This combination results in a soft and generous wine of great flavour persistence, complexity and weight, with a mouth filling grainy tannin structure that balances out the natural fruit acidity that will soften with further ageing.

Technical:

Sourced from two vineyards with vines aging from 40-75 years of age located on the southern slopes of McLaren Vale. The wine was fermented in two parts ¾ of the blend was fermented in small top fermenters whilst ¼ was fermented in barrel to allow a more integrated oak profile and ensure the natural fruit flavours were paramount. To complete the maturation process the wine went into seasoned hogshead barrels with a small percentage of new oak for a period of 14 months. This enabled the use of the 75% French oak and 25% American oak to slowly infiltrate the highly concentrated fruit flavour creating a well balanced yet complex tannin structure.
