Tasting Notes:

Deep blue black in the glass, the bouquet is vintage Coonawarra Cabernet with plentiful fresh cherries, raspberry, chocolate and a backbone of oak. The palate displays intense fresh fruit sweetness that is balanced out by a round velvety mouth-feel and full fruit flavours.

Technical:

Select parcels of fruit were sourced from the iconic terra rossa soils of Coonawarra for this wine. The fruit was picked at optimum ripeness in the cool of the night in order to retain the fruits natural acidity and of course the regional flavours and aromatics that the Coonawarra is world famous for. The wine was transferred to the winery where it was hand reared with extended time on skins. Hand plunging, cool preferment maceration and the use of select yeast, coupled with long post ferment maceration on skins followed the traditional techniques more often used in French wine making. The wine was aged in French oak then select barrels were chosen for the final blend prior to bottling.

This vintage was perhaps the least satisfying in early tasting, showing strong and unbalanced tannin and fruit. Nevertheless, a year later wines showed more softness and depth of flavour and length on the palate. It deserves a little cellaring and will be at its best in 2016 and beyond
