Tasting Notes:

Dark purple with cherry red hues in colour, the nose is inviting with its fresh cherries, raspberry, chocolate as well as a lovely hint of tomato leaf and oak. The palate shows fresh fruits in particular cherries, plums, blueberries and raspberries which all work in synergy with more complex flavours of cinnamon and a very well rounded velvet like tannin structure.

Technical:

Select parcels of fruit were sourced from the southern soils of McLaren Vale for this wine. We picked the fruit at optimum ripeness in the cool of the night in order to retain the fruits natural acidity and of course the regional flavours, which have made me fall in love with the McLaren Vale region and in particular its Cabernet Sauvignon. The wine was transferred to the winery where it was hand nurtured with extended time on skins. Hand plunging, cool preferment maceration and the use of select yeast, coupled with long post ferment maceration on skins followed the traditional techniques more often used in French winemaking. The wine was aged in French and American oak then select barrels were chosen for the final blend prior to bottling.
