Tasting Notes:

Deep and dark with purple flashes and red hues. Luscious aromas of ripe blackberry and concentrated cherry are highlighted by nuances of milk chocolate, aniseed, liquorice and cassis. The palate has rich blackberry, aniseed, liquorice and earthy leather flavours building through the mid palate before the silky tannins and well balanced acidity combine. This full-bodied Shiraz has a long lingering finish. Enhanced with a shot of espresso like American and French oak.

Technical:

The smallest volume produced of our icon Shiraz (only 300 dozen) I can remember and a single vineyard wine, which is also a rare occurrence. Fermented in stainless steel, small volume fermentors to maintain strong fruit flavor from the skins. Hand plunged twice daily for seven days then transferred into American and French oak barrique barrels for the remainder of ferment then spent 24 months to allow full flavor development prior to final barrel selection and bottling with minimal filtration.
