Tasting Notes:

Excellent colour of deep violet with purple hues. The nose has rich aromas of plum, dark cherries and liquorice with pronounced characters of chocolate and spice. The palate is medium to full bodied, with rich persistent flavour; fine tannins a creamy texture and lingering chocolate oak characters.

Technical:

The 2012 vintage was great year for all South Australian regions, showing superb colour extraction and depth of flavours. The grapes we harvested during the cool of the eving allowing for optimal quality and preservation of the natural fruit flavour. The choice of minimal oak treatment was due to the extraction and relatively high natural tannins. The fruit flavours are the highlight and hence the choice of oak and maturation timing needed to emphasize this. The result is a balanced and beautifully integrated wine. The wine competed the primary ferment in open fermenters and completed the secondary fermentation in stainless steel. The wine had a lot of natural tannin and hence we approached the oak very carefully. Most matured in stainless but 25% had one year French oak barrels, to allow for some softening of the natural oak tannis.
