Tasting Notes:

Deep in colour, it is a strong crimson red yet still bright. It has a clean bouquet which is aromatic and elegant that shows restrained spice, berry and herbal notes. The palate is classic Cabernet with obvious structure and length. It has juicy fruit with oak notes running down the spine accompanied by chocolate nuances. There are ripe blackcurrant fruit flavours which add a touch of gentle sweetness while the savoury fine grained tannins add to a long finish.     

Technical:

The grapes were hand-picked in small parcels in 2004 which is widely considered as one of our best vintages in Australia. The long, slow ripening period and quite cool March and April conditions benefited the cooler regions like the Adelaide Hills. In particular there was intense flavour development with more vibrant styles with floral notes.


Again we kept individual parcels separate to ensure the best possible flavours were extracted from each parcel. The grapes were fermented in small open top fermenters and hand plunged daily. Once pressed the individual batches were left to mature in a combination of old and new French and American oak hogsheads and barriques.
