Intense deep ruby red with purple hues. Ripe plum, dark cherry, licorice with Chinese five spice and ripe red currant aromas, with great purity, depth and subtle oak nuances. This wine illustrates exactly how I have been handcrafting premium red wine for my entire life, in the vineyard. The terroir and microclimate of specific blocks produce something different year with the obvious characters of this vintage being ripe plum, dark cherry and red currant. The extended time in barrel and use of different aged oak allowed this flavour to infiltrate the wine without over powering it and to run seamlessly into the natural tannin structure of the wine.
Picking started during March when I felt the colour and baume levels were at an optimum then the grapes were gently crushed and fermented in my small capacity open top fermenters for 7 days with hand plunging twice daily. The wine was then pressed and drained off into old French and American hogsheads' for 12 months prior to bottling. This wine encapsulates Barossa Valley Shiraz the way it should be, an honest reflection of the vineyard where it was grown.
