Tasting Notes:

Intense black and red berry fruit flavours with obvious characters of this vintage being blackberries plums and dark chocolate whilst there are more refined touches of both mint and oak coming through from the twelve months in small oak the wine has had. The extended time in barrel and use of different aged oak allowed this flavour to infiltrate the wine without overpowering it and to run seamlessly into the natural tannin structure of the wine.

Technical:

The grapes used for this wine were sourced from one of my favourite vineyard blocks which is usually fully contracted out but I made a special effort in 2011 to keep some for my own use. Picking started in March 2011 when I felt the colour and Baume levels were at an optimum, then the grapes were gently crushed and fermented in my small capacity open top fermenters for 7 days with hand plunging twice daily.

The wine was then pressed and drained off into new and old French and American hogshead's for 12 months prior to bottling. This wine encapsulates Barossa Valley Cabernet Sauvignon the way it should be, an honest reflection of the vineyard where it was grown.
