This exciting project began in the late nineties driven by a handful of entrepreneurs Berciano, Asturian and Galician locals. They were convinced that the great wines from all over the world have something in common: the terroir, a magic word borrowed from French, and that usually translates as terroir. The terroir, the combination of soil, climate, varieties and work of man, has a lot of singing to the singularity, the difference. So in Dominio de Tares says that the terroir is our reason for being. Fermin Rodriguez Uria winemaker group with this "palette" paints pictures that are our wines.
Bierzo's proximity to the Atlantic Ocean has a profound effect on its overall climate, with average temperatures during the growing season much lower than in Castilla y León's more inland areas. Nevertheless, the Cordillera Cantábrica mountain range in the north provides the vineyards with adequate shelter, ensuring that the local Mencía grapes achieve optimum ripeness to produce lively, fruity and often intense red wines. Like many other Spanish wines, these are categorized by the length of their maturation (including the time spent in oak barrels). Garnacha is another important red grape variety here and is primarily used in blends.
Mencía is a Spanish grape variety primarily found in the north-western part of the country, and it is primarily found in the Bierzo, Ribeira Sacra and Valdeorras regions.
